This water-white Spring honey is our most delicate varietal. Black Locust only blooms heavily every few years and we are fortunate when the Springtime weather cooperates and the bees are able to gather nectar from the incredibly fragrant blossoms.

This is one you may want to liquefy to savor it’s very subtle character, and also to appreciate how extremely light it is.

To gently liquefy raw honey (and keep it raw) we recommend that you warm a small pot of water on the stove-top until just simmering. Remove the pot from the heat and carefully place your jar of raw crystallized honey in it. In 30 minutes your honey should be almost completely liquefied.

Black Locust honey is higher in fructose than glucose and will re-crystallize very slowly.
